Easy Cold Soba Noodles with Cucumber Salad
Cold soba noodles and cucumber salad store well and can be made to last for 2 or 3 days. Add in some protein like salmon or chicken to round out. Really good when it's hot. Good with a Kirin Ichiban or Sapporo.
You Need:
Ingredients
Noodles
- 1/2 package - soba noodles
- 3 tablespoons - soy sauce
- 3 tablespoons - sesame oil
- 1/2 tablespoon - sugar
- 2 green onions minced
- sesame seeds (important)
Cucumber Salad
- 1 large cucumber
- 1/2 tablespoon - salt
- 1/2 tablespoon -sugar
- 1 tablespoon - apple vinegar
Equipment
- 1 large mixing bowl (use pyrex)
- knife for choppin'
- 1 medium bowl (cereal size)
- 1 pot for noodles
- Mandolin slicer
- Measuring spoons
Steps:
Prep/Cook
- Get the large mixing bowl and the medium bowl out.
- Fill the pot halfway with water, continue with prep while it comes to a boil.
- Cook soba noodles for package recommended time (usually about 5 mins)
- Once soba noodles are cooked, strain and wash under cold water. Let sit.
- Slice the cucumber, put in bowl, squeeze a bit and let it drain.
- Measure out cucumber salt, sugar, vinegar and add and mix.
- Chop the green onion, add to large mixing bowl
- Measure out soy sauce, sesame oil, and sugar. Mix with cold noodles
